AFAIK HTTP Client Connector doesn't support PATCH-method (at least it's not selectable on the dropdown menu). Can I just override the method in Before Execute -hook with a value that's not supported in the dropdown? Or do I need to create my own connector from the scratch (using an empty script connector etc.)?

Yessir, you can use code like this in a Hook of your Connector:

thisConnector.connector.setParam("method", "PATCH");
